From the most interesting podcast I listened to this week, I learned about the past, present, and future of dairy. Essentially though, we are talking about milk. But not the milk we have been used to. On the supply side, we find out about new high protein “recipes.” With refrigeration unnecessary for the ultra-pasteurized version, milk can go anywhere at any time–from a trip to the gym to a cross-country delivery. The result is a differentiable product. Seeing the potential, during 2020, Coca-Cola acquired one of the state-of-the art milk producers, and helped propel a milk revolution. Then, as a final ingredient, we get a taste of some milk history. No longer associated with our morning cereal, we see a new identity for milk.
